Crispy Keto Reuben Roll-Ups offer a delicious, low-carb take on the classic Reuben sandwich, perfect as a quick appetizer or meal.

  • 2 cups Shredded Swiss Cheese
  • 1/2 pound Sliced Corned Beef Deli Meat
  • 1 cup Sauerkraut
  • 1/4 cup Mayonnaise
  • 1 tsp Worcestershire Sauce
  • 1 1/2 tbsp Sugar-Free Ketchup
  • 2 tsp Swerve Confectioner’s Sugar Substitute
  • 1 tbsp Horseradish Sauce
  • 1 pinch Paprika

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Line a baking sheet with parchment paper and arrange the shredded Swiss cheese into 8 circles, about 3-4 inches in diameter.
  3. Bake the cheese circles for 6 to 8 minutes, or until the edges are golden brown and crispy.
  4. While the cheese is baking, combine the mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve confectioner’s sugar, horseradish sauce, and paprika in a small bowl to create the dressing. Stir until smooth.
  5. Once the cheese circles are baked, let them cool slightly for about a minute.
  6. Place a couple of slices of corned beef on top of each cheese circle, followed by some sauerkraut and a drizzle of the prepared dressing.
  7. Quickly and carefully fold the cheese over the filling while it is still pliable to form the roll-ups.
  8. Allow the Keto Crispy Reuben Roll-Ups to cool for a few minutes to crisp up further before serving.
