  • ¾ teaspoon Baking Soda

  • 2 sticks Butter
  • 1 ¾ cups White Sugar
  • 1 tablespoon Vanilla Bean Paste
  • 1 unit Egg
  • 1 unit Egg Yolk
  • 2 tablespoons Passionfruit Flakes
  • 1 teaspoon Grapefruit Zest
  • ½ cup Freeze-Dried Raspberries
  • Gel Food Coloring
  • â…› cup Valrhona Passionfruit Feves
  • ¼ cup Granulated Sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking soda, and salt until combined.
  3. Cream together the butter and white sugar until light and fluffy, about 3-4 minutes.
  4. Mix in the vanilla bean paste, egg, and egg yolk until incorporated.
  5. Gradually add the flour mixture into the wet ingredients, mixing on low speed until just combined.
  6. Divide the dough into four portions and flavor three with passionfruit flakes, grapefruit zest, and freeze-dried raspberries.
  7. Form the dough into colorful balls, rolling them in granulated sugar.
  8. Place cookie balls on baking sheets and bake for 8-9 minutes.
  9. Shape cookies with a cookie cutter while warm and let cool on wire racks.
  10. Store leftovers in an airtight container for up to a week.
