Kouti Recipe: Light, Moist, and Irresistible
Kouti Recipe: Delicate Yemeni Pastries
Ingredients:
- 2 cups of water
- 1 cup of sugar
- 1/2 teaspoon of salt
- 1 teaspoon of active dry yeast
- 7g of instant yeast
- 7g vanilla sugar
- 1 egg
- 1 tablespoon of butter
- 1 large spoonful (approximately 20g) of vegetable oil
- 5 and 1/2 cups of all-purpose flour
Note: Cup size is 100 ml.
Instructions:
- In a mixing bowl, combine water, sugar, salt, active dry yeast, instant yeast, vanilla sugar, egg, and butter.
- Gradually add the flour while mixing until a moist dough forms. Knead the dough until smooth and elastic.
- Cover the dough and let it rest for about an hour, or until it doubles in size.
- Preheat the oven to 180°C (350°F).
- Punch down the dough and divide it into small balls. Place them on a baking sheet lined with parchment paper, leaving space between each ball.
- Brush the tops of the pastries with beaten egg yolk for a shiny finish.
- Bake in the preheated oven for 15-20 minutes, or until golden brown.
- Allow the pastries to cool on a wire rack.
- Enjoy your homemade Kouti with a warm cup of coffee or tea!
