- 1 pound flank steak, thinly sliced
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 bell pepper, diced (red or green)
- 1 zucchini, sliced
- 1 cup snap peas
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 1/4 cup unsalted roasted peanuts
- 2 tablespoons hoisin sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper, to taste
- Green onions, chopped (for garnish)
- In a bowl, combine the sliced flank steak with soy sauce and cornstarch. Mix well and let it marinate for about 10 minutes.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the marinated beef to the skillet in a single layer. Sear for about 2-3 minutes until browned, then remove and set aside.
- In the same skillet, add the bell pepper, zucchini, and snap peas. Sauté for 3-4 minutes until vibrant and slightly tender.
- Stir in the minced garlic and ginger. Cook for about 1 minute until fragrant.
- Return the beef to the skillet and add the hoisin sauce, rice vinegar, sesame oil, and red pepper flakes. Stir well to combine all ingredients.
- Allow the mixture to cook for an additional 2-3 minutes, ensuring the beef is cooked through and the sauce is well incorporated.
- Stir in the roasted peanuts and mix until evenly distributed.
- Taste and adjust seasoning with salt and pepper as necessary.
- Remove from heat and garnish with chopped green onions before serving.
