  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper, diced (red or green)
  • 1 zucchini, sliced
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1/4 cup unsalted roasted peanuts
  • 2 tablespoons hoisin sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste
  • Green onions, chopped (for garnish)

Instructions

  1. In a bowl, combine the sliced flank steak with soy sauce and cornstarch. Mix well and let it marinate for about 10 minutes.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the marinated beef to the skillet in a single layer. Sear for about 2-3 minutes until browned, then remove and set aside.
  4. In the same skillet, add the bell pepper, zucchini, and snap peas. Sauté for 3-4 minutes until vibrant and slightly tender.
  5. Stir in the minced garlic and ginger. Cook for about 1 minute until fragrant.
  6. Return the beef to the skillet and add the hoisin sauce, rice vinegar, sesame oil, and red pepper flakes. Stir well to combine all ingredients.
  7. Allow the mixture to cook for an additional 2-3 minutes, ensuring the beef is cooked through and the sauce is well incorporated.
  8. Stir in the roasted peanuts and mix until evenly distributed.
  9. Taste and adjust seasoning with salt and pepper as necessary.
  10. Remove from heat and garnish with chopped green onions before serving.
