  • ½ cup powdered sugar (for glaze)
  • 1 to 2 tablespoons heavy cream, or milk (for glaze)

Instructions

  1. Preheat the oven to 350°F. Line a 9×13 glass baking dish with parchment paper, leaving an overhang on the sides.
  2. In a mixing bowl, whisk the eggs until frothy.
  3. Add 1½ cups granulated sugar, melted butter, fresh lemon juice, lemon zest, vanilla extract, and lemon oil/extract. Beat at medium speed until blended and thick.
  4. In a separate bowl, combine the all-purpose flour and baking powder.
  5. Gently add the flour mixture to the wet ingredients and mix until just combined. Do not overmix.
  6. Gently fold in 1½ cups fresh blueberries until scattered throughout the batter.
  7. Spread the batter evenly into the prepared baking dish using a spatula.
