Ingredients:
- 1 box lemon cake mix
- 1/3 cup of oil
- 2 eggs
Instructions:
- Preheat your oven to 350°F (175°C). Line an 8×8 pan with parchment paper.
- In a mixing bowl, combine the lemon cake mix, oil, and eggs. Mix until well combined. Avoid adding water.
- Press the cake mixture evenly into the prepared pan.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely. You can expedite the process by placing it in the fridge for a while.
Blueberry Frosting:
- 3 oz cream cheese, softened
- 1 cup powdered sugar
- 1-2 tbsp mashed blueberries (adjust to taste)
- Fruit juices can be added for desired consistency
Instructions:
- In a bowl, beat the softened cream cheese until smooth.
- Gradually add the powdered sugar, mixing until well incorporated.
- Stir in the mashed blueberries until evenly distributed. Adjust the amount according to your preference.
- For a thinner consistency, incorporate fruit juices as needed.
Assembly:
- Once the brownie has cooled completely, spread the blueberry frosting evenly over the top.
- Chill the frosted brownies in the fridge for at least 30 minutes to allow the frosting to set.
- Cut into squares and indulge in the delightful combination of lemon and blueberry flavors!
