  • 1 teaspoon vanilla extract
  • 1 cup lemon curd (homemade or store-bought)
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  3. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Add the egg yolk and vanilla extract to the butter-sugar mixture, mixing well to combine.
  5. Gradually blend the dry ingredients into the wet mixture until just combined.
  6. Cover the dough in plastic wrap and chill in the refrigerator for 30 minutes.
  7. Once chilled, remove the dough and scoop tablespoon-sized balls onto the prepared baking sheet, spaced a couple of inches apart.
  8. Use your thumb or the back of a measuring spoon to create an indention in the center of each cookie.
  9. Spoon a small amount of lemon curd into each thumbprint.
  10. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
  12. If desired, lightly dust the cookies with powdered sugar before serving.
