A Loaded Cucumber & Avocado Sandwich is a quick, healthy, and customizable delight perfect for lunch or picnics.

Ingredients

Scale
  • Bread of choice (Opt for whole grain, sourdough, or rye; gluten-free options available.)
  • 1 each ripe avocado (Choose a soft avocado for creamy goodness.)
  • 1 medium cucumber (Add a refreshing crunch; zucchini ribbons can be substituted.)
  • 1/2 cup fresh leafy greens (Use lettuce, spinach, or arugula.)
  • 1/4 cup cherry tomatoes (Halved for added sweetness and acidity.)
  • 2 tbsp red onion (Thinly sliced; skip for a milder flavor.)
  • 1 tbsp fresh herbs (Chopped dill, basil, cilantro, or mint to elevate flavor.)
  • 1 tsp lemon juice (Brightens flavor and prevents browning.)
  • salt and pepper (Essential seasonings to enhance flavors.)
  • 1 tsp olive oil or sandwich spread (Optional for richness; cream cheese or hummus are alternatives.)

Instructions

  1. Begin by selecting your favorite bread and lightly toast the slices in a toaster or on a skillet over medium heat for 2-3 minutes, until golden.
  2. In a small bowl, scoop out the flesh of one ripe avocado and mash it until smooth. Mix in one teaspoon of lemon juice, a pinch of salt, and pepper.
  3. Spread the mashed avocado over one side of each toasted bread slice.
  4. Layer the cucumber slices on top of the avocado spread, followed by leafy greens. Optionally add red onions and halved cherry tomatoes.
  5. Sprinkle chopped fresh herbs over the layered vegetables.
  6. Drizzle olive oil or sandwich spread over the assembled ingredients, then place the second slice of bread on top, pressing gently.
  7. Cut the sandwich in half diagonally and serve immediately.
