Preheat your oven to 350°F (175°C) and line cupcake pans with paper liners.
In a medium bowl, whisk together the cake flour, baking powder, baking soda, and salt. Set aside.
In another bowl, mix buttermilk, vegetable oil, lime juice, and lime zest. Set aside.
In the bowl of a stand mixer, beat the softened butter until smooth. Gradually add sugar and lime gelatin powder, mixing for 3 to 5 minutes until light and fluffy.
Add the eggs one at a time, beating on low speed after each addition until fully combined.
With the mixer on low speed, alternately add the flour mixture and buttermilk mixture, beginning and ending with the dry ingredients. Mix until just incorporated, avoiding over-mixing.
Scoop approximately 60ml (¼ cup) of batter into each cupcake liner, filling them about two-thirds full.
Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool completely.
To make the frosting, beat the softened butter in the mixer bowl until smooth. Gradually add softened cream cheese in chunks, mixing until blended.
Add tequila and lime zest. Slowly incorporate powdered sugar, mixing until smooth and creamy.
Chill the frosting for best piping results.
