  • 150 g Butter (Substitute with margarine for dairy-free)
  • 150 g Light Brown Soft Sugar (Can substitute with dark brown sugar)
  • 3 large Eggs (Use flax eggs for vegan option)
  • 200 g Self-Raising Flour (All-purpose flour plus baking powder can be used)
  • 1 tsp Ground Mixed Spice (Can substitute with a blend of cinnamon and nutmeg)
  • 300 g Mixed Dried Fruit (Combination of raisins, sultanas, and currants)
  • 50 ml Brandy or Orange Juice (Omit for non-alcoholic option)
  • 100 g Icing Sugar (Add warm water to achieve desired consistency)
  • Glacé Cherries (Decorative element)
  • Icing Holly Leaves (Decorative element)

Instructions

  1. Preheat your oven to 160°C (320°F) and prepare mini cake tins with parchment paper.
  2. In a large mixing bowl, cream together softened butter and light brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition until smooth.
  4. Gradually sift in the self-raising flour and ground mixed spice, folding gently until just combined.
  5. Stir in the mixed dried fruit and your choice of brandy or orange juice until evenly mixed.
  6. Divide the batter among mini cake tins, filling each two-thirds full and smoothing the tops.
  7. Bake in the preheated oven for 20-25 minutes until a skewer comes out clean.
  8. Cool the mini cakes in tins for 5 minutes before transferring to a wire rack to cool completely.
  9. Optionally, prepare icing and drizzle over cakes, decorating with glacé cherries and icing holly leaves.
