This Mediterranean Chicken Zucchini Bake is a flavorful and healthy dish featuring tender chicken breasts baked with zucchini, tomatoes, olives, and feta cheese. It’s an easy recipe perfect for a weeknight dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large zucchinis
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, pitted and sliced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup shredded mozzarella cheese (optional)
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Wash and slice zucchini into 1/4-inch thick rounds. Place on paper towels to remove excess moisture.
  3. Season chicken breasts with olive oil, oregano, basil, garlic powder, salt, and pepper.
  4. Slice cherry tomatoes in half, slice olives, and chop sun-dried tomatoes.
  5. Place seasoned chicken breasts in a lightly greased baking dish.
  6. Layer zucchini slices around the chicken.
  7. Sprinkle cherry tomatoes, olives, and sun-dried tomatoes around the chicken and zucchini.
  8. Bake for 30-35 minutes, or until chicken reaches 165°F (74°C).
  9. Remove from oven and sprinkle with feta cheese and mozzarella cheese (if using).
  10. Return to oven for 5-7 minutes, or until cheese is melted and golden brown.
  11. Garnish with fresh parsley.
  12. Drizzle with balsamic vinegar (optional) and serve.

Notes

  • You can add other vegetables like bell peppers or onions.
  • Adjust the amount of seasoning to your preference.
  • Serve with quinoa, couscous, or a light salad.
