A refreshing and nutritious Mediterranean Tuna Salad served in ripe avocado halves, perfect for a light lunch or a healthy snack.

Ingredients

  • 2 cans tuna in olive oil (5 oz each), drained
  • 1/2 cup cherry tomatoes, quartered
  • 1/3 cup cucumber, diced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, finely diced
  • 1/4 cup roasted red peppers, diced
  • 2 tablespoons feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 large ripe avocados

Instructions

  1. In a medium mixing bowl, combine drained tuna, cherry tomatoes, cucumber, Kalamata olives, red onion, roasted red peppers, feta cheese, and fresh parsley.
  2. Drizzle with olive oil and lemon juice, sprinkle with dried oregano, and season with salt and black pepper. Gently fold ingredients until evenly combined.
  3. Slice avocados in half lengthwise and remove pits. Gently scoop out a small portion of flesh from each half to create larger cavities for filling. Set aside scooped avocado flesh.
  4. Dice reserved avocado flesh and gently fold into the tuna salad mixture to combine.
  5. Fill each avocado half generously with Mediterranean tuna salad mixture. Serve immediately with optional garnish of fresh parsley or additional feta cheese.
