Mexican Casserole
Ingredients:
- 1 pound lean ground beef
- 1 can Ranch Style beans
- 1 10-12 ounce bag tortilla chips, crushed (note: not all chips may be needed)
- 1 can Ro-tel tomatoes
- 1 small onion, chopped
- 2 cups shredded cheddar cheese, divided
- 1 package taco seasoning
- 1 can cream of chicken soup
- 1/2 cup water
- Sour cream and salsa for serving
Directions:
- Preheat the oven to 325°F (165°C).
- Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
- Combine the beans, tomatoes, onion, taco seasoning, cream of chicken soup, and water with the cooked beef in the skillet. Simmer over medium-low heat until the mixture is well combined and heated through.
- Grease a 9×13 inch casserole dish. Layer the bottom with crushed tortilla chips.
- Layer the dish with half of the meat and bean mixture over the chips, followed by half of the shredded cheddar cheese.
- Repeat the layers, ending with a layer of cheese on top.
- Cover the casserole with foil and bake for 20-30 minutes, or until the dish is bubbly and heated through.
- Rest the casserole for 5-10 minutes before serving.
- Serve with sour cream and salsa.
