Mexican Casserole Recipe

Mexican Casserole

Ingredients:

  • 1 pound lean ground beef
  • 1 can Ranch Style beans
  • 1 10-12 ounce bag tortilla chips, crushed (note: not all chips may be needed)
  • 1 can Ro-tel tomatoes
  • 1 small onion, chopped
  • 2 cups shredded cheddar cheese, divided
  • 1 package taco seasoning
  • 1 can cream of chicken soup
  • 1/2 cup water
  • Sour cream and salsa for serving

Directions:

  1. Preheat the oven to 325°F (165°C).
  2. Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
  3. Combine the beans, tomatoes, onion, taco seasoning, cream of chicken soup, and water with the cooked beef in the skillet. Simmer over medium-low heat until the mixture is well combined and heated through.
  4. Grease a 9×13 inch casserole dish. Layer the bottom with crushed tortilla chips.
  5. Layer the dish with half of the meat and bean mixture over the chips, followed by half of the shredded cheddar cheese.
  6. Repeat the layers, ending with a layer of cheese on top.
  7. Cover the casserole with foil and bake for 20-30 minutes, or until the dish is bubbly and heated through.
  8. Rest the casserole for 5-10 minutes before serving.
  9. Serve with sour cream and salsa.
