Ingredients

Scale
  • 8 slices thick-cut bread (brioche or challah)
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons sugar
  • 2 medium apples, peeled, cored, and diced
  • 1 tablespoon lemon juice
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon (for filling)
  • A pinch of nutmeg
  • 4 tablespoons unsalted butter (for greasing)
  • Optional: Whipped cream, caramel sauce

Instructions

  1. Prepare the apple filling by combining diced apples, lemon juice, brown sugar, cinnamon, and nutmeg in a bowl. Set aside.
  2. Make the French toast base by whisking eggs, milk, vanilla extract, cinnamon, and sugar in a large bowl until smooth.
  3. Flatten each slice of bread with a rolling pin and cut into quarters.
  4. Grease a muffin tin with butter. Press each bread quarter into the muffin cups to form a cup shape.
  5. Fill each bread cup with the apple filling.
  6. Pour the French toast mixture over the filling until the cups are just full.
  7. Preheat oven to 350°F (175°C).
  8. Bake the mini apple pie french toast cups for 20-25 minutes, until golden brown and set.
  9. Let the cups cool in the muffin tin for 5 minutes before removing.
  10. Serve warm, optionally with whipped cream or caramel sauce.

Notes

  • Using day-old bread helps it absorb the custard mixture better without becoming soggy.
  • You can use a mix of apple varieties for a more complex flavor.
  • Ensure the bread cups are pressed firmly into the muffin tin to hold their shape.
