Mini Baked Parmesan Potato Rounds

Ingredients:

  • 35-40 Classic Baby Creamers® potatoes, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 cup grated Parmesan cheese (pre-grated)
  • 1 tablespoon garlic salt
  • 1 teaspoon black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C) and lightly coat two baking sheets with non-stick spray.
  2. Thoroughly wash and thinly slice the potatoes, then transfer them to a large mixing bowl.
  3. Drizzle the vegetable oil over the potatoes and toss to ensure they are evenly coated.
  4. In a gallon-sized resealable bag, combine the Parmesan cheese, garlic salt, and black pepper. Seal the bag and shake well to mix the ingredients.
  5. Place the oiled potatoes into the cheese mixture and shake until each piece is uniformly coated.
  6. Arrange the coated potato slices in a single layer on the prepared baking sheets.
  7. Bake for about 40 minutes, turning the potatoes once midway through, until they are golden brown and fork-tender.
  8. Remove from the oven and serve warm with your choice of dipping sauce, such as ranch dressing or nacho cheese.
