A rich and creamy cheesecake with layers of mint chocolate fudge and a classic cheesecake base, perfect for any occasion.

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mint chocolate chips
  • 1/4 cup heavy cream
  • 1/4 cup chocolate syrup

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine cookie crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Pour half of the cream cheese mixture over the crust.
  6. Sprinkle half of the mint chocolate chips over the cream cheese layer.
  7. Drizzle half of the chocolate syrup over the chips.
  8. Repeat with the remaining cream cheese mixture, mint chocolate chips, and chocolate syrup.
  9. Bake for 50-60 minutes, or until the center is set.
  10. Let cool completely before refrigerating for at least 4 hours.

  • Ensure cream cheese is at room temperature for a lump-free batter.
