- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup mint chocolate chips
- 1/4 cup heavy cream
- 1/4 cup chocolate syrup
- Preheat oven to 350°F (175°C).
- Combine cookie crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract.
- Pour half of the cream cheese mixture over the crust.
- Sprinkle half of the mint chocolate chips over the cream cheese layer.
- Drizzle half of the chocolate syrup over the chips.
- Repeat with the remaining cream cheese mixture, mint chocolate chips, and chocolate syrup.
- Bake for 50-60 minutes, or until the center is set.
- Let cool completely before refrigerating for at least 4 hours.
