Monster Eye Brownie Bites are spooky treats that transform simple fudge brownies into playful, eyeball-adorned delights, perfect for Halloween.

  • 1 box Fudge Brownie Mix
  • 2 large Eggs
  • ¼ cup Vegetable Oil
  • 1 cup Water
  • ½ cup Unsalted Butter, softened
  • 3 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Milk or Heavy Cream
  • Green Gel Food Coloring
  • Candy Eyeballs for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 24-cup mini muffin pan.
  2. In a large mixing bowl, combine fudge brownie mix, eggs, vegetable oil, and water. Stir gently until just combined.
  3. Fill each muffin cup about two-thirds full with brownie batter.
  4. Bake for 12-15 minutes until a toothpick comes out with a few moist crumbs.
  5. Create a well in the center of each brownie using the back of a spoon while they are still hot.
  6. Allow the brownie bites to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  7. Beat softened butter until fluffy, then gradually incorporate powdered sugar, milk, and vanilla extract until smooth.
  8. Mix in green gel food coloring until desired color is achieved.
  9. Frost each cooled brownie with green frosting and top with candy eyeballs.
  10. Allow decorated brownies to set for about 30 minutes before serving.

Notes

  • Leftover brownies can be stored in an airtight container for up to 3 days.
  • They can also be frozen for up to 3 months.
