Olive Garden Inspired Steak Gorgonzola Alfredo

Ingredients:

  • 1 pound fettuccine pasta
  • 1 1/2 pounds steak (ribeye or sirloin), thinly sliced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup crumbled Gorgonzola cheese
  • 2 tablespoons butter
  • 2 cups fresh spinach
  • 1/4 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Cook fettuccine pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add steak strips and cook until browned to your liking, about 4-5 minutes. Remove steak from skillet and set aside.
  3. Reduce heat to medium. In the same skillet, sauté minced garlic for 1-2 minutes until fragrant. Pour in heavy cream, bring to a simmer, and cook for 3-4 minutes until slightly thickened.
  4. Stir in Parmesan and Gorgonzola cheeses until melted and sauce is smooth.
  5. Add butter, spinach, and sun-dried tomatoes to the skillet. Cook for 2-3 minutes until spinach is wilted. Return cooked steak to the skillet, toss to combine with the sauce.
  6. Add cooked fettuccine to the skillet, toss to coat pasta in the sauce. Season with salt and pepper to taste.
  7. Serve immediately, garnished with fresh parsley.
