One-Pot Chili is a hearty and flavorful dish perfect for any occasion.

  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef (or turkey)
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 2 cups beef broth (or vegetable broth)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup corn (fresh, frozen, or canned)
  • Optional toppings: shredded cheese, sour cream, chopped green onions, and cilantro

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute.
  3. Add the ground beef (or turkey) to the pot. Cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
  4. Stir in the kidney beans, black beans, diced tomatoes, and tomato paste until well combined.
  5. Add the beef broth to the pot, ensuring all ingredients are submerged.
  6. Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Stir to combine.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.
  8. In the last 5 minutes of cooking, stir in the corn. Allow it to heat through.
  9. Taste the chili and adjust seasonings if needed. Add more salt, pepper, or chili powder according to your preference.
  10. Once the chili is fully cooked, remove it from heat and prepare to serve.
