- 1 tablespoon olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 pound ground beef (or turkey)
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes
- 1 can (6 ounces) tomato paste
- 2 cups beef broth (or vegetable broth)
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup corn (fresh, frozen, or canned)
- Optional toppings: shredded cheese, sour cream, chopped green onions, and cilantro
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute.
- Add the ground beef (or turkey) to the pot. Cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
- Stir in the kidney beans, black beans, diced tomatoes, and tomato paste until well combined.
- Add the beef broth to the pot, ensuring all ingredients are submerged.
- Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.
- In the last 5 minutes of cooking, stir in the corn. Allow it to heat through.
- Taste the chili and adjust seasonings if needed. Add more salt, pepper, or chili powder according to your preference.
- Once the chili is fully cooked, remove it from heat and prepare to serve.
