One Pot Creamy Pesto Chicken Pasta is a quick and delicious meal made in one pot.

Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 12 ounces pasta (penne or fusilli work best)
  • 1 cup heavy cream
  • 1 cup basil pesto (store-bought or homemade)
  • 1 cup chicken broth
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish (optional)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot or Dutch oven over medium heat, add the olive oil.
  2. Add the diced chicken breasts to the pot. Season with garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  3. Stir in the pasta and chicken broth. Bring to a boil.
  4. Once boiling, reduce the heat to medium-low. Cover the pot and simmer for about 10 minutes, stirring occasionally, until the pasta is al dente.
  5. Remove the pot from heat and stir in the heavy cream and basil pesto until well combined.
  6. Gently fold in the cherry tomatoes, allowing them to warm through.
  7. Taste and adjust the seasoning with additional salt and pepper if needed.
  8. Garnish with fresh basil leaves and serve with grated Parmesan cheese if desired.
