Ingredients:

  • 1 1/2 cups milk (refer to Note 1)
  • 1 cup hot sauce (such as Texas Pete)
  • 2 cups all-purpose flour
  • 1/4 cup cornmeal

Instructions:

  1. Prepare the Marinade:

    In a large bowl, combine the milk and hot sauce. Mix well to ensure the flavors blend together. This will be the marinade for your main ingredient.

  2. Marinate the Main Ingredient:

    Add your choice of main ingredient (e.g., chicken, fish, or vegetables) to the marinade. Ensure each piece is fully submerged. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to penetrate.

  3. Prepare the Coating:

    In a separate bowl, combine the all-purpose flour and cornmeal. Mix thoroughly to create an even coating mixture.

  4. Coat the Main Ingredient:

    Remove the marinated ingredient from the fridge. One by one, dredge each piece in the flour-cornmeal mixture, ensuring an even coat. Shake off any excess coating.

  5. Cooking:

    Heat oil in a large skillet or deep fryer to 350°F (175°C). Carefully add the coated pieces to the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-5 minutes per side for chicken or fish, and 2-3 minutes for vegetables.

    Use a slotted spoon to transfer the fried pieces to a plate lined with paper towels to drain any excess oil.

  6. Serve:

    Serve immediately while hot. This dish pairs well with a side of coleslaw, fries, or a dipping sauce of your choice.

Note 1:

For a richer flavor, you can substitute buttermilk for regular milk.
