Peanut Butter Cup Cake Roll Recipe

Ingredients:

For the Cake:

  • 3 large eggs
  • ¾ cup granulated sugar
  • 2 teaspoons brewed coffee or water
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ¾ cup all-purpose flour
  • Powdered sugar (for rolling)

For the Filling & Topping:

  • 2 ounces cream cheese, softened
  • ⅓ cup peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons + ⅔ cup heavy whipping cream
  • 7 Reese’s peanut butter cups, chopped (about 1 cup)
  • 1 cup semi-sweet chocolate chips

Instructions:

Prepare the Cake:

  1. Preheat your oven to 350°F (175°C).
  2. Line a jelly roll pan with foil and coat it with cooking spray.
  3. In a mixing bowl, combine the eggs, granulated sugar, brewed coffee or water, and vanilla extract.
  4. Gradually add the cocoa powder, salt, baking powder, and all-purpose flour to the wet mixture.
  5. Spread the batter evenly in the prepared pan.
  6. Bake for 10-15 minutes, or until the cake springs back when lightly touched.
  7. While still warm, roll the cake in a towel dusted with powdered sugar and allow it to cool.

Prepare the Filling:

  1. Beat together the softened cream cheese and peanut butter until smooth.
  2. Gradually add the powdered sugar, vanilla extract, and 4 tablespoons of heavy whipping cream, mixing until well combined.
  3. Fold in the chopped Reese’s peanut butter cups.

Assemble the Cake Roll:

  1. Carefully unroll the cooled cake.
  2. Spread the peanut butter filling evenly over the cake.
  3. Gently re-roll the cake and refrigerate until set.

Prepare the Topping:

  1. In a microwave-safe bowl, combine the semi-sweet chocolate chips and ⅔ cup heavy whipping cream.
  2. Microwave in 30-second intervals, whisking until the mixture is smooth and fully combined.
  3. Allow the ganache to thicken slightly as it cools.

Decorate and Serve:

  1. Pour the ganache over the chilled cake roll, letting it drip down the sides.
  2. Sprinkle additional chopped Reese’s peanut butter cups on top for garnish.
  3. Chill the cake roll until the ganache is set.
  4. Slice and enjoy the delightful combination of chocolate and peanut butter in every bite of this Peanut Butter Cup Cake Roll!
