Ingredients
Scale
2 ripe pears, thinly sliced
1 cup ricotta cheese
2 tablespoons honey, plus extra for drizzling
1 teaspoon vanilla extract
1 teaspoon lemon juice
4 slices of your favorite artisanal bread (sourdough or multigrain work beautifully)
1 tablespoon olive oil
A pinch of sea salt
Fresh mint leaves for garnish (optional)
Crushed pistachios or walnuts for topping (optional)
Instructions
Prepare the Ricotta Mixture: In a medium bowl, combine the ricotta cheese, honey, vanilla extract, lemon juice, and sea salt. Mix until smooth and well-combined. Set aside.
Toast the Bread: Heat a grill pan or skillet over medium heat. Drizzle olive oil on both sides of the bread slices. Once the pan is hot, place the slices of bread in the pan and toast for about 2-3 minutes on each side until golden brown and crispy. Remove from heat.
Assemble the Toast: Spread a generous layer of the honey ricotta mixture on each slice of toasted bread.
Add the Pears: Arrange the thinly sliced pears on top of the ricotta spread, fanning them out for an elegant look.
Garnish: Drizzle a little extra honey over the top, and if desired, sprinkle with crushed pistachios or walnuts for added crunch. Add a few fresh mint leaves for a pop of color and flavor.
Serve: Enjoy immediately while the toast is warm and the pears are refreshingly cool.
Notes
For a crispier exterior, consider grilling your bread over medium heat.
Experiment with different types of honey like clover or wildflower for varied flavors.
Consider adding spices like cinnamon or nutmeg to the ricotta mixture for warmth.
Try other fruits like figs or apples as alternatives to pears.
For gluten-free, use gluten-free bread. For dairy-free, use nut-based ricotta.
