Ingredients:

  • 1 tablespoon oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 8 ounces mushrooms, diced
  • 2 cloves garlic, chopped
  • 2 pounds ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup cheese whiz (optional)
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons ketchup
  • 2 eggs
  • 1 cup panko breadcrumbs (gluten-free option available)
  • 4 ounces provolone, sliced (optional)
  • 8 slices provolone cheese

Directions:

  1. Heat the oil in a large pan over medium heat. Add diced onion, bell pepper, and mushrooms. Cook until tender, about 7-10 minutes.
  2. Add chopped garlic and cook until fragrant, about 1 minute. Remove from heat.
  3. In a large mixing bowl, combine ground beef, salt, pepper, cheese whiz (if using), Worcestershire sauce, ketchup, eggs, panko breadcrumbs, and the cooked onion, pepper, mushroom, and garlic mixture.
  4. Place half of the meat mixture into a baking dish, shaping it into a loaf shape. Lay slices of provolone cheese evenly over the meat mixture.
  5. Cover the cheese with the remaining meat mixture, ensuring to seal the edges well to encase the cheese. Shape the loaf as desired and place it on a baking sheet.
  6. Bake in a preheated oven at 350°F (180°C) until cooked through, about 50-60 minutes.
  7. Remove from the oven and arrange the remaining provolone slices over the top of the meatloaf. Return to the oven and broil until the cheese is melted and bubbly, about 2-4 minutes.
