Zesty Pickled Mustard Seeds That Elevate Every Meal

  • ½ cup yellow mustard seeds (can substitute with brown mustard seeds for a spicier kick)
  • ½ cup white wine vinegar (can switch to apple cider vinegar for a sweeter touch)
  • 1 tablespoon sea salt (regular table salt works too, but use less)
  • 2 tablespoons honey (can substitute with agave syrup or brown sugar)
  • 1 teaspoon mustard powder (recommended for depth, can be left out)
  • 1 pinch red pepper flakes (adjust to taste or omit for milder flavor)
  • ¼ cup finely minced shallots (can replace with green onions or red onions)

Instructions

  1. Soak the mustard seeds in enough water to cover them completely for 12 to 24 hours.
  2. In a medium saucepan, combine the soaked mustard seeds, white wine vinegar, sea salt, honey, mustard powder, and red pepper flakes.
  3. Place the saucepan over medium heat and bring the mixture to a simmer, cooking for approximately 20 minutes.
  4. Remove from heat, stir in the finely minced shallots and additional white wine vinegar if desired.
  5. Transfer the mixture to a clean glass jar and refrigerate for at least 24 hours before enjoying.
