Pistachio Pineapple Cake

Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup chopped pistachios
  • 1 cup crushed pineapple, drained

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the flour, baking powder, and salt.
  3. In a separate bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the flour mixture to the creamed butter and sugar, alternating with the milk. Begin and end with the flour mixture, mixing until just combined.
  5. Gently fold in the chopped pistachios and drained pineapple.
  6. Pour the batter into a greased and floured 9-inch cake pan.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
