Ingredients
Scale
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 tablespoon olive oil
¾ cup water (warm)
1 cup shredded mozzarella cheese
½ cup pepperoni slices (or any preferred filling)
¼ cup pizza sauce (plus extra for serving)
Optional: bell peppers, mushrooms, olives, or any desired toppings
Egg wash (1 egg beaten with 1 tablespoon water, for brushing)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the flour, baking powder, and salt. Add the olive oil and warm water, mixing until a dough forms. Knead the dough for about 2-3 minutes until smooth.
Cover the dough with a clean kitchen towel and let it rest for 10 minutes.
On a floured surface, roll out the dough into a large rectangle, about ¼ inch thick.
Use a pizza cutter or knife to slice the dough into squares, approximately 4×4 inches each.
Place a spoonful of pizza sauce in the center of each square, followed by a generous amount of mozzarella cheese and your choice of toppings.
Fold the dough over to create a triangle or rectangle shape, pressing the edges together to seal. Use a fork to crimp the edges for extra security.
Place the sealed pockets on the prepared baking sheet. Brush the tops with the egg wash to give them a golden color while baking.
Bake in the preheated oven for 20-25 minutes or until the pockets are golden brown and cooked through.
Allow the pizza pockets to cool slightly before serving with extra pizza sauce on the side for dipping.
Notes
Experiment with different fillings to suit your taste.
Store any leftovers in an airtight container in the fridge.
