  • 1/4 cup Chopped Scallions
  • 1/2 cup Grated Parmesan Cheese
  • 1 large Egg
  • 1 cup Breadcrumbs
  • 1/2 cup Sour Cream
  • For the Hot Dog:
  • 4 Hot Dogs (your favorite type, including vegetarian options)
  • For Frying:
  • 2 tablespoons Olive Oil (for rubbing potatoes)
  • 4 cups Vegetable Oil (for frying)
  • For the Dipping Sauce:
  • 1/2 cup Mayonnaise
  • 2 tablespoons Mustard
  • 1 tablespoon Sambol Chili Paste
  • 1/4 cup Relish
  • 1/2 cup Ketchup

Instructions

  1. Prepare the Dipping Sauce: In a mixing bowl, combine mayonnaise, mustard, sambol chili paste, relish, and ketchup. Mix until fully blended. Cover and refrigerate.
  2. Bake the Potatoes: Preheat your oven to 350°F. Poke holes in the potatoes, rub them with olive oil, and sprinkle with salt. Bake on the oven rack for about 1.5 hours, or until tender.
  3. Make the Potato Mixture: Once the baked potatoes are cool enough to handle, peel them, rice them into a large bowl. Add chopped scallions, grated Parmesan cheese, egg, breadcrumbs, and sour cream. Mix until smooth.
  4. Assemble the Potato Dogs: Insert a popsicle stick into one end of each hot dog. Take a portion of the potato mixture, wrap it evenly around the hot dog, and press to seal tightly.
  5. Fry the Potato Dogs: Heat vegetable oil in a deep pot to 375°F. Fry the potato-covered hot dogs in small batches for about 3 minutes, turning gently for even browning until golden and crispy.
  6. Serve: Drain the fried potato dogs on paper towels and sprinkle with salt while hot. Serve immediately with the chilled dipping sauce.
