Potato Stuffed with Meat Recipe
Ingredients:
For Potatoes:
- 3 large potatoes (approximately 1kg)
- 2 tablespoons olive oil
- A pinch of salt
- 150g grated mozzarella cheese
For the Stuffing:
- 350g minced meat
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons tomato sauce
- 6 sprigs coriander, finely chopped
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon curry powder
- 1 teaspoon paprika
- 100g grated mozzarella cheese
Instructions:

Prepare the Potatoes:
- Preheat the oven to 200°C (390°F).
- Wash and scrub the potatoes thoroughly, then pat them dry.
- Cut each potato in half lengthwise.
- Scoop out the flesh from each potato half, leaving about 1/4 inch around the edges.
- Brush the potato skins with olive oil and sprinkle with salt.
- Place the potato skins on a baking tray and bake for 15-20 minutes until they are crispy.

Prepare the Stuffing:
- Heat olive oil in a pan over medium heat.
- Add chopped onions and minced garlic, sauté until golden brown.
- Add minced meat, salt, black pepper, curry powder, and paprika. Cook until the meat is browned and fully cooked.
- Stir in tomato sauce and chopped coriander. Cook for an additional 2-3 minutes.
- Remove from heat and let it cool slightly.
- Mix in grated mozzarella cheese into the meat mixture.

Stuff the Potatoes:
- Take the crispy potato skins out of the oven.
- Fill each potato skin with the meat and cheese mixture.
- Top each stuffed potato with additional grated mozzarella cheese.

Bake:
- Return the stuffed potatoes to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.

Serve:
- Remove from the oven and let them cool slightly.
- Garnish with fresh coriander leaves if desired.
- Serve hot and enjoy!
