Pierogi Casserole Recipe
Ingredients:
- 1 package (16 oz) frozen pierogies
- 1 package kielbasa sausage, sliced
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup chicken broth (from a 32-oz carton)
- 1/8 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup thinly sliced green onions
Instructions:
- Preheat oven to 375°F (190°C). Lightly grease an 8×8 inch (2-quart) glass baking dish with cooking spray.
- Place frozen pierogies in a bowl of water to thaw for 5-10 minutes. Drain well.
- Arrange the thawed pierogies evenly in the prepared baking dish. Top with sliced kielbasa sausage.
- In a medium bowl, whisk together softened cream cheese, sour cream, chicken broth, and black pepper until smooth. Stir in 1/2 cup of shredded cheddar cheese and 1/3 cup of thinly sliced green onions, reserving the rest for topping.
- Pour the cream cheese mixture evenly over the pierogies and sausage in the baking dish.
- Cover the dish with foil and bake in the preheated oven for 30 minutes.
- Remove the foil, sprinkle the remaining shredded cheddar cheese over the casserole, and return to the oven. Bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle with the reserved thinly sliced green onions before serving.
