Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • ¼ cup vegetable oil
  • ¼ cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • 1 egg yolk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, mix pumpkin puree, sugar, vegetable oil, applesauce, eggs, and vanilla until smooth.
  4. Gradually stir the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. In a separate bowl, beat softened cream cheese, powdered sugar, and egg yolk until smooth.
  6. Pour half of the pumpkin batter into the prepared loaf pan. Spoon the cream cheese mixture on top and swirl gently with a knife. Pour the remaining pumpkin batter over the cream cheese layer.
  7. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove the loaf from the oven and let it cool in the pan for about 15 minutes. Transfer to a wire rack to cool completely.
  9. Slice and serve.

Notes

  • For best flavor, use fresh pumpkin puree.
  • Add chopped walnuts or pecans for extra texture.
  • Adjust spices to your preference.
