Ingredients

Scale
  • For the Brownies:
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the Pumpkin Cream Cheese Swirl:
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking dish with parchment paper, allowing some overhang for easy removal.
  2. Melt unsalted butter in a medium saucepan over low heat. Remove from heat and stir in sugar until smooth. Let cool slightly before adding eggs one at a time, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined. Do not overmix.
  4. Beat softened cream cheese in a medium mixing bowl until smooth. Add granulated sugar, pumpkin puree, pumpkin spice, vanilla extract, and egg. Mix until well combined and creamy.
  5. Pour half of the brownie batter into the prepared baking dish and spread evenly. Dollop half of the pumpkin cream cheese mixture on top. Repeat with the remaining brownie batter and pumpkin mixture.
  6. Use a knife or toothpick to gently swirl the cream cheese mixture into the brownie batter for a marbled effect.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow brownies to cool in the pan on a wire rack for about 15 minutes. Lift them out using the parchment overhang and let them cool completely before cutting into squares.
  9. Serve warm or at room temperature.

Notes

  • For easy removal, use parchment paper with overhang in the baking dish.
  • Do not overmix the brownie batter.
  • Cool brownies completely before cutting for clean slices.
  • These brownies pair well with vanilla ice cream or whipped cream.
