Instructions

  1. Prepare the Cold Brew: In a large jar or pitcher, combine the coarsely ground coffee and cold water. Stir gently to ensure all grounds are saturated.
  2. Cover the container and let it steep in the refrigerator for 12-24 hours, depending on your desired strength.
  3. Strain the Cold Brew: After steeping, strain the coffee mixture through a fine mesh sieve or cheesecloth into another container. Discard the ground coffee.
  4. Taste your cold brew and add your preferred sweetener if desired. Set aside.
  5. Make the Pumpkin Cream: In a mixing bowl, combine the heavy cream, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice.
  6. Using a hand mixer or whisk, whip the mixture until soft peaks form. Be careful not to over-whip; you want it to be creamy and pourable.
  7. Assemble the Drink: In a glass, fill it halfway with ice cubes. Pour the cold brew coffee over the ice until the glass is about three-quarters full.
