  • 1 egg
  • 500ml (2 cups) of water
  • 800g (6 3/8 cups) all-purpose flour
  • 2 tbsp olive oil
  • 1kg boiled potatoes
  • 50g butter
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 250g cheese (of your choice), grated
  • 140g salami slices

Instructions:

  1. In a large mixing bowl, combine the egg, olive oil, water, flour, and salt. Mix until a dough forms. Allow the dough to rest for 10 minutes to ensure it’s pliable and easy to work with.
  2. Meanwhile, in another bowl, mash the boiled potatoes with the butter, salt, and black pepper until smooth and well combined.
  3. Divide the rested dough into four equal portions. Roll out each portion into a thin circle, about 1/4 inch thick.
  4. Spoon a generous portion of the prepared mashed potato mixture onto one half of each dough circle, leaving a small border around the edge.
  5. Sprinkle grated cheese over the potato mixture, and then layer on the salami slices.
  6. Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal, using a fork to crimp the edges if desired.
  7. Heat a non-stick pan over medium heat and add a drizzle of olive oil. Once hot, carefully transfer the filled dumplings to the pan.
  8. Cook the dumplings for 4-6 minutes on each side, or until golden brown and crispy.
  9. Once cooked, remove the dumplings from the pan and drain on paper towels to remove any excess oil.
