- 1 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup white chocolate chips
- 1 cup fresh raspberries (or frozen, thawed)
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until smooth and well incorporated.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined. Do not overmix.
- Gently fold in the white chocolate chips and fresh raspberries, being careful not to break the berries.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the blondies cool in the pan for about 15-20 minutes before transferring them to a wire rack to cool completely.
- Once cooled, cut into squares and enjoy!
