1 cup granulated sugar
½ cup brown sugar, packed
1 cup unsalted butter, softened
1 large egg
1 tablespoon red food coloring
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon salt
1 tablespoon unsweetened cocoa powder
1 cup cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract (for filling)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg, red food coloring, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the edges are set. The centers may look slightly underbaked; this is okay.
Remove from the oven and let them cool on the baking sheet for about 10 minutes before transferring to a wire rack to cool completely.
In a separate bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
Once the cookies are completely cool, spread a generous amount of cream cheese filling on the flat side of one cookie. Top with another cookie, flat side down, to create a sandwich.
Continue until all cookies are filled and assembled.
