Ingredients

  • 1 (10 oz) bag of mini marshmallows
  • 3 tablespoons unsalted butter
  • 1 cup red velvet cake mix (dry)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: Red food coloring
  • Optional: White chocolate chips or cream cheese frosting for drizzling

Instructions

  1. Grease a 9×13-inch baking dish with butter or line it with parchment paper.
  2. Melt the unsalted butter in a large saucepan over low heat.
  3. Add the mini marshmallows and stir until fully melted and smooth.
  4. Remove from heat and stir in the red velvet cake mix until well combined.
  5. Gradually add the rice cereal, stirring until fully coated.
  6. Add the vanilla extract and salt. If desired, add red food coloring and mix.
  7. Pour the mixture into the prepared baking dish and press evenly into the pan.
  8. Allow to cool at room temperature for about 30 minutes until set.
  9. Once cooled, cut into squares or rectangles for serving.
  10. Optional: Drizzle with melted white chocolate or cream cheese frosting.
