  • 1 tablespoon fresh rosemary, chopped
  • ½ cup grated Parmesan cheese
  • ¼ cup olive oil
  • Salt and pepper, to taste
  • 1 tablespoon Dijon mustard (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the beef roast generously with salt and pepper. If using, spread Dijon mustard evenly over the surface of the roast.
  3. In a bowl, combine the fresh breadcrumbs, minced garlic, chopped parsley, thyme, rosemary, grated Parmesan cheese, and olive oil. Mix until well combined.
  4. Press the breadcrumb mixture onto the top and sides of the roast, ensuring an even coating.
  5. Place the beef on a roasting rack in a baking dish. Roast in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
