A creamy and comforting Roasted Garlic Cheddar Cauliflower Soup that is veggie-packed, gluten-free, and made without cream or flour. This easy recipe delivers rich flavor with roasted garlic and sharp cheddar cheese.

Ingredients

Scale
  • 1 large head Cauliflower (for about 45 cups of florets)
  • 3 tablespoons Olive Oil, divided
  • 1 medium Yellow Onion, diced
  • 1 whole head Garlic, roasted until soft
  • 4 cups Vegetable Broth (or chicken broth for non-vegetarian option)
  • Salt, to taste
  • Pepper, to taste
  • 1 cup Sharp Cheddar Cheese, shredded
  • Green Onions, sliced (for garnish)
  • Additional Cheddar, for sprinkling (for garnish)
  • Croutons or Toasted Sourdough, to serve alongside

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Wash and cut the cauliflower into florets. Toss them in a bowl with 1-2 tablespoons of olive oil, ensuring they’re well coated. Season with salt and pepper.
  2. Slice off the top of a whole head of garlic, drizzle it with olive oil, and wrap it in foil. Place the garlic and seasoned cauliflower florets on the prepared baking sheet. Roast together for 30-35 minutes, flipping halfway until golden brown and tender.
  3. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, sautéing for about 5-8 minutes until translucent and fragrant.
  4. Squeeze the softened garlic out of its skin into a blender. Add the roasted cauliflower, sautéed onions, vegetable broth, and additional salt and pepper to taste. Blend until smooth and creamy.
  5. Return the blended mixture to the pot over low heat, simmer, and stir in the shredded sharp cheddar cheese until melted.
  6. Taste and adjust seasoning if necessary. Serve the Roasted Garlic Cheddar Cauliflower Soup in bowls, garnished with sliced green onions and extra cheddar, alongside croutons or toasted sourdough.

Notes

  • For best results, use high-quality sharp cheddar cheese.
  • Adjust seasoning as you cook to elevate flavors.
  • Ensure garlic and cauliflower are roasted until golden brown for deeper flavor.
  • For a super creamy texture, blend longer and add a little more broth.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop, adding a splash of broth if it thickens.
