  • 8 bone-in, skin-on chicken thighs
  • 1 head of garlic
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lemon
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the top off the head of garlic to expose the cloves. Drizzle with a teaspoon of olive oil and wrap in aluminum foil. Set aside.
  3. In a bowl, combine the remaining olive oil, rosemary, thyme, parsley, lemon zest, salt, pepper, lemon juice, and red pepper flakes (if using). Mix well to create the herb marinade for your roasted garlic herb chicken.
  4. Place the chicken thighs in a large resealable bag or a dish. Pour the herb and garlic marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (up to overnight for deeper flavor).
  5. Take the garlicky chicken out of the fridge and let it come to room temperature for about 15 minutes.
  6. Arrange the marinated chicken thighs skin-side up on a baking sheet or in a large cast-iron skillet.

  8. Roast in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown and crispy. Remove the foil for the last 10-15 minutes for crispier roasted garlic herb chicken skin.
  9. Once done, allow the chicken to rest for about 5-10 minutes. Squeeze the roasted garlic cloves out of their skins and mix into the drippings, or serve separately as a spread. Serve the chicken alongside roasted vegetables or a fresh salad.
