1 loaf of day-old bread, cubed (about 10 cups )
1 cup unsalted butter
1 large onion, diced
3 celery stalks, diced
4 cloves garlic, minced
2 tablespoons fresh sage, chopped (or 1 tablespoon dried sage)
1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
1 teaspoon salt
½ teaspoon black pepper
1 cup chicken or vegetable broth
2 large eggs, beaten
Optional: 1 cup dried cranberries or chopped nuts (like walnuts or pecans)
Preheat your oven to 350°F (175°C). Grease a large baking dish.
Place the cubed bread in a large mixing bowl and set aside.
In a skillet, melt the butter over medium heat. Add the diced onion and celery, cooking until softened (about 5-7 minutes).
Stir in the minced garlic, sage, thyme, salt, and pepper. Cook for an additional 2-3 minutes until fragrant.
Pour the sautéed mixture over the cubed bread. Mix well to coat the bread evenly.
In a separate bowl, combine the broth and beaten eggs. Pour this mixture over the bread and vegetable mixture, stirring to combine. If adding cranberries or nuts, fold them in at this stage.
Spoon the stuffing into the greased baking dish, spreading it evenly.
Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and crispy.
Allow the stuffing to cool for a few minutes before serving.
