  • 2 tablespoons olive oil
  • 4 bone-in pork chops (about 1 inch thick)
  • Salt and freshly ground black pepper to taste
  • 1 cup apple cider
  • 1/4 cup maple syrup
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon unsalted butter

Instructions

  1. Pat the pork chops dry with paper towels. Season generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the pork chops for 3-4 minutes per side, until golden brown. Remove the pork chops from the skillet and set aside.
  4. Pour the apple cider and maple syrup into the skillet. Add the rosemary and thyme sprigs. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Let the mixture simmer for 5-7 minutes, or until it has reduced by about half and slightly thickened.
  6. Stir in the apple cider vinegar.
  7. Return the pork chops to the skillet, nestling them into the glaze.
  8. Reduce the heat to medium-low, cover, and simmer for 8-12 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C). Baste the pork chops with the glaze occasionally.
  9. Remove the pork chops from the skillet. Discard the herb sprigs.
  10. Stir the butter into the glaze until melted and the sauce is glossy.
  11. Serve the pork chops immediately, spooning the savory apple cider glaze over them.

Notes

  • For a thicker glaze, simmer for a few extra minutes.
  • You can substitute other cuts of pork or even chicken or firm vegetables for the pork chops.
  • Ensure your apple cider is 100% pure apple cider, not apple juice, for the best flavor.
