  • 6 large eggs
  • 1 cup whole milk
  • 4 strips of bacon, diced
  • 2 cups fresh spinach, roughly chopped
  • 1 cup shredded sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Optional: Crushed red pepper flakes for a kick
  • Olive oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil.
  2. In a skillet over medium heat, cook the diced bacon until crispy. Remove bacon with a slotted spoon to a paper towel-lined plate to drain excess fat. Reserve about 1 tablespoon of bacon grease in the skillet.
  3. In the same skillet with the reserved bacon grease, add the chopped spinach and sauté for about 2-3 minutes, or until wilted. Remove from heat and let cool slightly.
  4. In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, black pepper, and salt until fully combined.
  5. Add the cooked bacon, sautéed spinach, and shredded cheddar cheese to the egg mixture. Stir gently to mix all the ingredients evenly.
  6. Pour the egg mixture into the prepared baking dish. Sprinkle with crushed red pepper flakes, if desired.
  7. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is lightly golden.
  8. Once baked, remove from the oven and allow to cool for about 5 minutes. Cut into squares and serve warm.
