Ingredients:

  • 2 (1 ounce) packets dry onion soup mix
  • 1/2 teaspoon paprika
  • 2 pounds lean beef stew meat, cut into bite-sized pieces
  • 5 medium potatoes, peeled and diced
  • 2 to 3 cups baby carrots
  • 1 small yellow onion, chopped
  • 2 (10 ounces each) cans cream of celery soup
  • 1 cup ketchup (tomato sauce can be substituted if preferred)

Instructions:

  1. In a large plastic bag, combine the dry onion soup mix and paprika. Add the meat and shake the bag to evenly coat the meat with the seasonings. You may need to do this step in two batches to ensure all the meat is coated.
  2. Once the meat is coated, spread it out evenly into a greased 7-quart crock-pot.
  3. Evenly distribute the diced potatoes, carrots, and onion over the meat.
  4. In a small bowl, mix together the cream of celery soup and ketchup. Pour the mixture over the meat and vegetables in the crock-pot.
  5. Cover the crock-pot with the lid. Cook on low heat for 8 hours or until the meat is cooked through and the vegetables are tender.
  6. Stir everything together before serving.
