Savory Egg and Sausage Muffins
Ingredients:
- 1 tablespoon butter
- 1/2 onion, finely minced
- 1/2 bell pepper, finely minced
- 1 small carrot, diced
- 1/2 teaspoon salt
- 3 sausages, chopped
- 4 eggs
- 50 ml milk
- 1/2 teaspoon black pepper
- Fresh parsley, chopped
- 50g mozzarella cheese, grated
Instructions:
- Preheat your oven to 180°C (360°F).
- Heat a skillet over medium heat and add the butter. Once melted, add the minced onion and sauté for a few minutes until softened. Add the diced carrot, minced bell pepper, salt, and black pepper, and continue to sauté until the vegetables are tender.
- In a large bowl, whisk together the eggs, milk, additional salt, and black pepper. Stir in the sautéed vegetable mixture and chopped parsley.
- Evenly distribute the chopped sausages into a muffin tin, then pour the egg and vegetable mixture over the sausages, filling each cup. Sprinkle the grated mozzarella cheese on top.
- Bake in the preheated oven for about 20 minutes, or until the egg muffins are set and lightly golden on top.
- Allow to cool slightly before serving.
