Savory Egg and Sausage Muffins

Ingredients:

  • 1 tablespoon butter
  • 1/2 onion, finely minced
  • 1/2 bell pepper, finely minced
  • 1 small carrot, diced
  • 1/2 teaspoon salt
  • 3 sausages, chopped
  • 4 eggs
  • 50 ml milk
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped
  • 50g mozzarella cheese, grated

Instructions:

  1. Preheat your oven to 180°C (360°F).
  2. Heat a skillet over medium heat and add the butter. Once melted, add the minced onion and sauté for a few minutes until softened. Add the diced carrot, minced bell pepper, salt, and black pepper, and continue to sauté until the vegetables are tender.
  3. In a large bowl, whisk together the eggs, milk, additional salt, and black pepper. Stir in the sautéed vegetable mixture and chopped parsley.
  4. Evenly distribute the chopped sausages into a muffin tin, then pour the egg and vegetable mixture over the sausages, filling each cup. Sprinkle the grated mozzarella cheese on top.
  5. Bake in the preheated oven for about 20 minutes, or until the egg muffins are set and lightly golden on top.
  6. Allow to cool slightly before serving.
