Ingredients

Scale
  • 2 pork tenderloins (about 1 lb each)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika (optional)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ cup low-sodium chicken broth

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine minced garlic, chopped rosemary, thyme, parsley, olive oil, salt, black pepper, smoked paprika (if using), lemon juice, and lemon zest. Mix well.
  3. Pat pork tenderloins dry. Rub the savory garlic herb marinade all over the tenderloins, ensuring even coating. Marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  4. Heat a little olive oil in a large oven-safe skillet over medium-high heat. Sear the pork tenderloins for 2-3 minutes per side until golden brown.
  5. Carefully pour the chicken broth into the skillet.
  6. Transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Remove skillet from oven. Transfer pork tenderloins to a cutting board. Cover loosely with foil and let rest for 5-10 minutes.
  8. Slice the pork into medallions and drizzle with pan juices. Serve with roasted vegetables or rice.

Notes

  • Ensure the pork reaches an internal temperature of 145°F (63°C) for safe consumption.
  • Resting the meat is crucial for retaining juices and ensuring a tender result.
  • For a deeper flavor, marinate the pork for a longer period.
