Savory Homemade Beef Stew Recipe 🍲😋

Ingredients:
- 2 tablespoons of olive oil
- 3 pounds of beef chuck roast, cubed
- 5 cloves of garlic, minced
- 1 large yellow onion, diced
- 4 large carrots, bite-sized pieces
- 1 pound of potatoes, bite-sized pieces
- 1 green pepper, bite-sized pieces
- 3 tablespoons of tomato paste
- 3 cups of beef broth
- 1 tablespoon of Worcestershire Sauce
- 1 teaspoon of ground black pepper
- 1 tablespoon of salt (to taste)
- 3 bay leaves
- 1 tablespoon of brown sugar
- 1 teaspoon of Italian seasoning
- Thai chili (optional)
Instructions:
- Heat olive oil in a large pot over medium-high heat. Add half of the beef cubes, season with half of the salt and pepper, and sear for about 5 minutes until browned. Repeat with the remaining beef cubes. Set aside.
- Reduce heat to medium-low. Keep the grease in the pot and add diced onion. Sauté for 5 minutes.
- Add minced garlic, brown sugar, and Italian seasoning. Sauté for 2-3 minutes until fragrant.
- Pour in beef broth, tomato paste, bay leaves, water, and Worcestershire sauce. Return all beef cubes and juices to the pot.
- Bring to a boil, cover, and reduce heat to medium-low. Cook covered for 1.5 hours.
- Add carrots and potatoes, cover, and continue cooking for another hour or until vegetables reach desired tenderness. Optionally, add Thai chili and green pepper.
