Recipe: Mississippi Mud Potatoes

Ingredients:

  • 2 lbs russet potatoes, peeled and cubed
  • 6 slices bacon, cooked and crumbled
  • 1 cup grated cheddar cheese
  • 1/2 cup crème fraîche
  • 1/4 cup mayonnaise
  • 1/4 cup chopped green onions
  • Salt and pepper, to taste

Instructions:

  1. Cook the potatoes:
    • Boil the cubed potatoes in salted water until tender. Drain and let cool slightly.
  2. Mix the ingredients:
    • In a large bowl, combine the cooked potatoes, crumbled bacon, grated cheddar cheese, crème fraîche, mayonnaise, and chopped green onions. Season with salt and pepper to taste.
  3. Cooking:
    • Preheat the oven to 350°F (175°C).
    • Transfer the mixture to a baking dish and bake for 20-25 minutes, until heated through and the cheese is melted.
