  • 6 bone-in, skin-on chicken thighs
  • 10 cloves of garlic, peeled
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 lemon, zested and juiced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine lemon juice, lemon zest, olive oil, minced garlic (reserve a few whole cloves), rosemary, thyme, parsley, salt, pepper, smoked paprika, and red pepper flakes. Whisk until well mixed.
  3. Place chicken thighs in a large zip-top bag or bowl. Pour marinade over chicken, ensuring each thigh is well coated. Seal and marinate in the refrigerator for at least 30 minutes to 2 hours (or overnight for best results).
  4. Take chicken out of the refrigerator and let it sit at room temperature for about 15 minutes.
  5. In a large oven-proof skillet or baking dish, place the reserved whole garlic cloves at the bottom.
  6. Arrange chicken thighs skin-side up over the garlic cloves.
  7. Roast the chicken thighs in the preheated oven for 35-45 minutes, or until the skin is golden brown and crispy, and the internal temperature reaches 165°F (74°C).
  8. If skin isn’t crispy enough, broil for an additional 2-3 minutes, watching closely to prevent burning.
  9. Remove chicken from the oven and let it rest for 5-10 minutes.
  10. Serve hot, garnished with fresh herbs and lemon wedges if desired, alongside roasted vegetables or a fresh salad.
