A refreshing and easy shrimp ceviche recipe, perfect for any occasion. This no-cook dish features tender shrimp marinated in lime juice with fresh vegetables and creamy avocado.

  • 1 lb Fresh Shrimp (raw, medium)
  • 1/2 cup Fresh Lime Juice
  • Salt to taste
  • Pepper to taste
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Cumin
  • 1 tsp Garlic Powder
  • 1 medium English Cucumber, chopped
  • 1 cup Tomatoes, chopped
  • 1/4 cup Red Onion, finely chopped
  • 1 medium Avocado, diced
  • 1/4 cup Fresh Cilantro, chopped
  • 1 medium Jalapeño, seeded and chopped
  • 1/4 cup Clamato Juice (optional)
  • 1 tsp Worcestershire Sauce

Instructions

  1. In a non-reactive bowl, combine lime juice, salt, pepper, smoked paprika, cumin, and garlic powder.
  2. Add the raw shrimp and ensure they are fully coated.
  3. Cover and refrigerate for 60 minutes, or until the shrimp turns opaque.
  4. While the shrimp marinates, chop the cucumber, tomatoes, red onion, cilantro, and jalapeño.
  5. After marinating, gently fold the chopped vegetables into the shrimp mixture.
  6. Cover and refrigerate for another 30-60 minutes to allow flavors to meld.
  7. Just before serving, dice the avocado and add it to the ceviche.
  8. Gently mix in the optional Clamato juice and Worcestershire sauce.
  9. Taste and adjust seasoning as needed.
  10. Serve chilled, garnished with extra cilantro if desired.

Notes

  • For best results, consume within 4 hours of preparation.
  • Store leftovers in an airtight container in the refrigerator for up to 24 hours, though texture may change.
  • Shrimp ceviche does not freeze well.
